During my third pregnancy I developed gestational diabetes. Having GD led me to carb counting and changing the way I cooked meals for my family. Among the many low carb recipes I tried, this recipe was a top favorite. My 6 year old requests it often. It's super easy, cheesy, and requires few ingredients.

Cheesy Ground Beef, Cauliflower, & Broccoli
Serves: 6
Ingredients:
1 lb. lean ground beef
1 16 oz bag of frozen broccoli & cauliflower mix. (you can use one or the other but, I like to use both)
1 medium yellow onion diced
1 tsp. garlic powder
1/2 tsp. salt
1 tsp. pepper
2 cups cheddar cheese
Instructions:
1. In a skillet on medium-high heat brown the ground beef. Drain.
2. Add the onion and cook for 2-3 minutes or until onions are soft and translucent.
3. Stir in garlic powder, salt, pepper and frozen veggies. Cook until veggies are soft, stirring occasionally.
4. Turn the heat to low and add the cheddar cheese. Cover with lid until cheese is melted.
Cooked this for dinner tonight! My family loved it! The only addition we made was white rice but that’s cause we are a family of five! Thank you for sharing the recipe it was 5 stars in our house ❤️
